VEGAN SUNBURGERS

8 – 10 servings

Ingredients:

1       cups raw sunflower seeds

1       cup raw pumpkin seeds

1/2   cup sun-dried tomatoes in oil (no need to drain)

1     cup carrot, grated

1       jalapeno, minced

1       small yellow onion, diced

1/4   teaspoon sea salt

1       teaspoon chili powder

1      teaspoon Italian herbs

1/2   teaspoon fresh garlic, chopped

3     tablespoons olive oil

8      large leaves of romaine or butter lettuce, or one leaf per serving

 

Coconut or olive oil spray for baking sheet.

 

Directions:

 

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and lightly spray with coconut or olive oil spray.

 

Place all ingredients in a food processor and blend until a smooth batter is formed, scraping down the sides occasionally. Form the batter into patties and place on baking sheet.

 

Bake for 20 – 25 minutes or until patties are golden brown. Remove from baking sheet and place patties in lettuce wraps with sliced avocado, red onion, fresh tomatoes and your condiment of choice (Ketchup, Mustard, Banana Peppers and etc.)
